Fonsi is a living legend within the hallowed halls of Underbelly back of house. Known for being able to single-handedly take down a grizzly bear, bare handed, there isn’t a person that doesn’t sing his praises! (And by grizzly bear, we mean an insane service and by bare handed we mean, he can work 4 stations at once and not break a sweat.) Anyhow, he has been with Underbelly since day one. He is also the only person that has the recipe to his wife’s legendary green salsa…. though when Lily makes it, it really is the best. The Underbelly mantra is “I love Fonsi” whenever his name is mentioned… it’s the truth.
